Let’s make the Traditional Oliya Recipe of Rajasthan. It is mostly made on Sheetla Saptami festival. Oliya is also considered to be the Prasad of Mataji.
This recipe is made with yogurt and rice. It is made the day before and eaten cold on the second day.

Rajasthani traditional Oliya is made using rice and yogurt and usually made on Sheetla Saptami festival as Prasad for Mataji.

For Rice Yogurt Sweet Oliya
- Rice, 1 bowl or 250 grams
- Yogurt (curd), 750 grams
- Sugar powder, 150 grams
- Almonds shredded, 2 tsp
- Cashews shredded, 2 tsp
- Pistachios Shredded, 2 tsp
- Charoli (chironji), 1/2 tsp
- Cardamom powder, 1/2 tsp
- Saffron milk, 10-12 threads
- Dry fruits (for garnishing), 1 tsp
For making Rice Yogurt Sweet Oliya
Wash rice thoroughly and keep in water for 20 to 30 minutes.
After that, put the rice in the cooker by adding 4 times water on the stove and allow it to cook until 4 to 5 whistles.
After that, cook on low flame for 5 minutes. Keep in mind that the rice turns very soft.
Turn off the stove and leave the rice to cool down.
After it cools down, take the rice in a bowl and pour curd and sugar on it.
Mix them well, and put saffron milk on it and all the shredded dry fruits.
Add cardamom powder, charoli and mix everything well.
Oliya is ready. You can serve it by putting it in a clay vessel or in a glass and garnish it with dry fruits. It tastes very tasty when eaten cold and it is also very easy to make.
NOTES AND TIPS:
- Keep in mind that you have to make rice very soft, if you have
- For 1 bowl of rice, you need to take 4 bowls of water. Then only rice will become soft and Oliya will come out to be delicious.
