For Lauki Muthia Doodhi Muthia
Lauki- 1 (500 grams)
Wheat flour - 1 cup
Semolina - 3/4 cup
Besan - 3/4 cup
Fennel - 1 tsp
Ajwain - ½ tsp
Green chilli paste - 1 tsp
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Roasted cumin powder - 1/2 tsp
Salt - 1/2 tsp (according to taste)
Lemon juice - 2 tsp
Baking soda - 1/4 tsp
Oil - 1 tbsp
Water (for cooking Muthia) - 3 glasses
For making Tadka
Oil - 2 tbsp
Asafoetida - 1 pinch
mustard seeds - 1 tsp
Cumin seeds - 1/2 tsp
Til seeds - 1 tsp
Kadhi Patte - 8-10
Lemon juice - 1 tsp
For making Lauki Muthia Doodhi Muthia
We will take a Lauki and wash it well. Peel and grate it.
Now add flour, gram flour, semolina and all the above spices, mix it well and knead it like a dough.
Now by applying a little oil on the hands, break the dough and make it round and give it the shape of a fist. Similarly, make all the muthias.
Put water in a vessel on the gas to boil, then take a sieve and apply oil on it and deposit all the muthia on the sieve. Then put it on the pot and cover it from above so that our Lauki muthia can steam well.
Let it cook for about 15 to 20 minutes. After that, take out the muthia and cool them and cut them into pieces.
Now put a pan on the gas and put two spoons of oil in it. Then add asafoetida, cumin, sesame, curry leaves and all the other ingredients and stir it well, and then put the pieces of muthia in it and mix it well.
Now add lemon juice and chaat masala to it and mix it well.
