INGREDIENTS

Ingredients for gram flour mixture:
  • Colocasia Leaves, 7-8
  • Gram flour, 4 tbsp
  • Red chilli powder, 1/2 tsp
  • Coriander powder, 1/2 tsp
  • Turmeric powder, 1/4 tsp
  • Fennel powder, 1/2 tsp
  • Salt, 1/2 teaspoon
  • Carom seeds, 1/2 teaspoon
  • Green Chillies + Garlic + Ginger Paste, 1 teaspoon
Ingredients for making Tadka:
  • Asafoetida, 1 pinch
  • Mustard seeds, 1/2 teaspoon
  • Cumin seeds, 1/2 teaspoon
  • Onion, 1
  • Ginger, 1/2 inch piece
  • Garlic, 5-7 buds
  • Green chilies, 2
  • Tomato, 1
  • Chilli powder, 1/2 teaspoon
  • Coriander powder, 1/2 teaspoon
  • Turmeric powder, 1/4 teaspoon
  • Fennel powder, 1 teaspoon
  • Cumin powder 1 teaspoon
  • Salt, 1/2 teaspoon (as per taste)
  • Black Pepper powder, 1/4 teaspoon
  • Water, 2-3 teaspoons
  • Lemon juice, 2-3 teaspoon

INSTRUCTIONS:

For making Gujarati Patra Colocasia Leaves Stir Fry
  1. First of all, wash the Colocasia leaves and keep them aside.

  3. Now we will make gram flour mixture and add dry spices and ginger garlic paste.

  5. Now take a leaf and flip it, cover it with gram flour mixture and then roll. Do the same for all the leaves.

  7. Now take a steel sieve and grease it with some oil. Then we will store all the rolls on it.

  9. Now we will put half a liter of water in a pot on the stove and allow it to heat up well.

  11. Now we'll put the sieve on top of the pot and let the rolls cook in steam for 15-20 minutes.

  13. Turn off the gas and cool the leaves and cut them round.

  15. After that, place the pan on the gas and put oil in it and prepare the tempering for the leaves. Add asafetida, mustard seeds, cumin seeds, green pepper ginger, garlic onion paste and fry for 2-3 minutes.

  17. Add tomato paste and all the dry spices, and add a little water. Saute them well.

  19. Now add sliced rolls to the spices and mix well, and then add lemon juice.
