INGREDIENTS

For Baingan Bharta
  • Baingan (Brinjal) - 300 grams
  • Onion - 2 -3 finely chopped
  • Tomato 2 - 3 finely chopped
  • Green chilli and garlic paste - 1 tsp
  • Ginger - 1 piece grated
  • Green chilli - 1 finely chopped
  • Asafoetida - 1 Pinch
  • Cumin - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Salt 2- to taste
  • Fennel powder - 1 tsp
  • Garam Masala - 1/2 tsp
  • Oil - 2 tbsp
  • Green Coriander (for garnishing) - chopped

INSTRUCTIONS:

For making Baingan Bharta
  1. Wash the Baingan and wipe it. Then make a cut in it to see if there are any worms in it, and also it’s not rotten from inside.

  3. Now apply some oil around the Baingan and roast it on low flame till it becomes soft and then keep it to cool down.

  5. Now put oil in a pan on the gas, then add asafoetida, cumin, grated ginger, green chili, garlic paste, and green chili, chopped onions, and fry it for 3 to 4 minutes. After that, add tomatoes to it and let it cook for 3-4 more minutes.

  7. After that, put all the dry spices in it and cook it till it leaves the oil. At this time, our spices are cooked well.

  9. Now our Baingan has also cooled down. Peel the baingan and mash it well with a spoon, masher, or fork, and cook it well after adding it to the prepared spices.

  11. Finally add garam masala and coriander leaves. Cover and cook for 2 minutes.
